and it was really good.

This week I was given the 'recipes' category for the school newspaper. I immediately thought of grilled cheese, which is, in my opinion, the least disgusting of the college food staples. So I, being a new proud owner (for the next three months) of my very own kitchen, jumped at the opportunity to test out a few new recipes. Can I just make this week grilled cheese week? Cool?

Ingredients:
-2 slices of sourdough bread
-1 cup macaroni and cheese pasta
-2 tomato slices*
-panko bread crumbs
-at least (in my opinion) 1/2 cup shredded cheddar cheese
-butter
-salt & pepper
-ketchup (to serve with)
*optional, but my roommate and I both agreed that a tomato would have made this sandwich even better!
Instructions:
1. Place pan on medium heat with a chunk of butter.
2. While pan is heating, mix mac & cheese in a bowl with about 3ish teaspoons of bread crumbs and a few pinches of shredded cheese.
3. Form mixture into patties and place on pan. Cook until golden brown on each side.
4. While the mac & cheese patties cook, butter the outside of each bread slice.
5. Press the buttered side of the bread into a plate of panko crumbs.
6. Remove mac & cheese patties from pan and set aside.
7. Place slice on pan with bread crumbs facing downwards.
8. Layer shredded cheese, mac & cheese patty, more shredded cheese, and then top slice of bread with crumbs facing upwards.
9. Cook until golden brown on each side.
This recipe has officially changed the way I think of grilled cheese. Enjoy!
